Kunnu Aya: Tigernut Juice


 Tigernuts is popularly known in the north as 'Aya', in the west as O'fio', in the east as 'Aki-hausa', while the scientific name is Cyperus Escutentus. there are two types of tigernut: The dry and fresh. Tigernuts are actually a vegetable, a type of tuber with  a nut like texture which is high in fiber, protein and natural sugar. Tigernut milk is naturally sweet, creamy, and offers a rich flavor. It is so easy to make requiring nothing more than tigernut and water. Thou i do add coconut and date fruit to mine to give it that naturally sweet flavor.

Tigernuts are also traditionally used in folk medicine along with ginger and mints to treat upset stomachs, digestive issues and irritable bowels. They are rich in minerals like Calcium, iron, magnesium, potassium and phosphorous as well as vitamins C&E. they can prevent heart attacks, thrombosis and active blood circulation. Tigernut milk is a great substitute for cow milk.

HOW TO PREPARE JULIET'S QUICK KUNNU AYA:

  1. Soak tigernut in water
  2. Wash &add coconut and date fruit to tigernut, make sure you remove seed from the date fruit.
  3. Blend them together 
  4. Add few cups of water to extract the juice
  5. Put in refrigerator and serve cool.
